Luis Eduardo Campos, known as “Don Luis”, produces this fine microlot from Costa Rica that will quickly enchant your palate. In the Alajuela region in the legendary West Valley (more on this below), he lives with his family on his 200ha (15ha for coffee) Finca Cordillera de Fuego. Don Luis is constantly looking for new and innovative ways to improve his coffees at an altitude of up to 1800m above sea level. He came up with the idea of thermal fermentation, for which the man with a university degree experimented for several years. He wanted to extract the naturally occurring aromas of the coffee through an innovative fermentation process – the thermic process was born. Don Luis attaches great importance to sustainability. He has reduced greenhouse gas emissions and his water consumption. Solar panels provide all the energy for the main office and about half of the mill's energy.
Ol'ochoy Farm, Nandi County, Kenya
The family-owned coffee farm is located in the highlands of Western Kenya, more precisely in the Nandi County region (Rift Valley) on Monkey Hill at an altitude of over 1900 meters. Coffee farmer Paul Nian (56) – himself a trained lawyer – works with his family, producing some of the finest microlot specialties in his region on his 30-hectare farm. He grows his Arabica plants using state-of-the-art processing methods and smart farming.

The Röststätte filter coffee duo consists of two of our most popular filter coffees in the range: Don Luis and Olochoy AB – a real highlight in your favorite cup. Gently roasted, the two filter coffee roasts are ideal for preparation with the Hario V60, the French Press, the AeroPress or the filter coffee machine. About the filter coffees
Back in the range again this year, Paul Nian's AB Microlot has impressed us all round. Roasted as a filter coffee, the Olochoy has intensely fruity notes of redcurrant, rosehip and delicious cocoa nibs. We also found herbs and grapefruit in the cupping profile. This outstanding coffee has a super clean taste – highly recommended for lovers of washed coffees. Fans of washed coffees from Kenya will love Olochoy, especially as a handbrew.

Our first release from the renowned Fazenda Cordillera de Fuego in the West Valley of Costa Rica has arrived – and we are delighted. This microlot was prepared using the innovative Thermic Process, which gives the coffee a particularly complex and sweet aroma. In the cup, you can expect a balanced, smooth filter coffee with tropical notes of coconut, chocolate, orange candy, cinnamon and tonka bean. Don Luis is not only a real highlight for anyone who loves exceptional coffees – it is also perfect for relaxed summer days. A sustainably produced coffee with a clear character and plenty of depth.

Sustainable cultivation and quality awareness
Similar to wine, the origin, cultivation and careful harvesting also form the basis for a specialty coffee. For our coffees, we use only ripe and hand-picked 100% Arabica coffee beans, because the elaborate harvest by hand is an essential quality criterion. Our highland coffees are natural products and are grown in shady forest gardens in a nature-friendly way. This preserves the biodiversity in the growing region. The coffee cherries can ripen slowly at cool altitudes with nourishing and fertile soil conditions. The coffee plants have more time to develop their characteristic and fruity aromas under these optimal climatic conditions near the equator.  
Freshly roasted by hand
All Röststätte coffees are gently roasted by hand in Berlin so that the natural flavors can fully develop without unwanted acids. For a pronounced body and a versatile flavor profile in the cup, we want to emphasize and optimally process the special features of the respective variety, farm and origin of the coffee with our roasting. The aim is to exploit the full potential of the green coffee through our roasting process in order to highlight the valuable work of the producers in the growing countries.
