Origin: Brazil & Peru
The Brazilian part in Sinfonia Espresso comes from the Fazenda Santiago farm in Patos de Minas, Brazil. Patos de Minas is located in the Cerrado Mineiro region in the state of Minas Gerais in Brazil, which is very renowned for coffee cultivation. The coffee from Peru comes from Cedros Cafe Cooperative, which specializes in sustainable agriculture and the promotion of specialty coffee for its members.
Origin: Peru, Kenya & Ethiopia
In Novum we blend three high-quality coffees from Guatemala, Kenya and Ethiopia. The portion from Peru is a farm coffee from the Cajamarca region. It is grown above 1,500 meters above sea level and processed washed. As Kenya we process an AB Microlot and the portion from Ethiopia comes from the Sidamo region, grown at an average altitude of 1,800 meters by various small farms.

The Sinfonia is composed of two washed varieties. The main component here is Caturra and Catuai. The Novum contains Catuai from Peru, SL28 from Kenya and Heirloom from Ethiopia.

Espresso Duo
The Röststätte Espresso Duo consists of our two popular signature espresso blends Sinfonia and Novum. We have been roasting both varieties since our founding. For each year, we conclude suitable contracts for the purchase of the coffee in order to secure the taste profile permanently.
Gently roasted, both espresso blends are ideally suited for preparation with the portafilter, the stovetop pot or the fully automatic machine. In the set you can now try both espresso roasts and get them at a discounted price.
About the Espressos
Sinfonia is a particularly full-bodied espresso with a chocolaty, nutty flavor profile. This espresso blend has been one of our most popular espresso roasts from the very beginning. Here, two Arabica varieties from Brazil and Peru come together to create a chocolaty-sweet, creamy aroma in the cup.

Novum is a rather fruity and complex espresso with a balanced and aromatic fruity acidity. The taste is dominated by intense aromas of black currant and sweetness of dark chocolate. Novum is a very pleasant espresso blend with a particularly pleasant ratio of sweetness and fruit. Three varieties are roasted, originating from Peru, Kenya and Ethiopia, which together form a finely structured taste experience in the espresso.

Sustainable cultivation and quality awareness
Similar to wine, the origin, cultivation and careful harvesting also form the basis for a specialty coffee. For our coffees, we use only ripe and hand-picked 100% Arabica coffee beans, because the elaborate harvest by hand is an essential quality criterion. Our highland coffees are natural products and are grown in shady forest gardens in a nature-friendly way. This preserves the biodiversity in the growing region. The coffee cherries can ripen slowly at cool altitudes with nutritious and fertile soil conditions. The coffee plants have more time to develop their characteristic and fruity aromas under these optimal climatic conditions near the equator.
 
Freshly roasted by hand
All Röststätte coffees are gently roasted by hand in Berlin so that the natural flavors can fully develop without unwanted acids. For a pronounced body and a versatile flavor profile in the cup, we want to emphasize and optimally process the special features of the respective variety, farm and origin of the coffee with our roasting. The aim is to exploit the full potential of the green coffee through our roasting process and to highlight the valuable work of the producers in the growing countries.
