Brazil | Cerrado & Mogiana Community Lot
For Sinfonia, we use Santiago from Brazil, currently sourced as a community lot called Cemorrado. The coffee farms are located in renowned regions known for producing high-quality coffee. This community blend represents a strong commitment to consistent flavor and careful craftsmanship. The coffee cherries are selected according to various criteria, including distinctive flavor profiles, bean density, and color consistency, ensuring reliable quality in every batch. Each cup of Cemorrado brings together a wide range of aromas and reflects the harmony of ecological sustainability and collective community effort.
Olapa, Esquipulas, Chiquimula and Oriente
Green Valleys of the Chorti is a washed single-origin coffee from southeastern Guatemala and is also part of our espresso blend Sinfonia. It is grown by smallholder farmers at altitudes between 1,500 and 1,700 meters. The region is characterized by volcanic soils and a humid, often misty climate, creating ideal conditions for coffee cultivation. The cup profile is well-balanced, with a clear structure and pleasant sweetness, allowing it to integrate harmoniously into the blend. Beyond its quality, the coffee is linked to a special initiative: Green Valleys of the Chorti supports educational and childcare programs for children in coffee-farming communities in the border region between Guatemala, Honduras and El Salvador.

Sinfonia
A particularly full-bodied and chocolaty 100% Arabica espresso with a chocolaty-nutty flavor profile. The Sinfonia Blend has been one of our most popular espresso roasts from the very beginning. Here, two Arabica varieties from Brazil and Guatemala meet and form a chocolaty-sweet and creamy aroma in the cup.
Story
Low in acidity and powerful in taste. Sinfonia is an espresso with a distinct sweetness of chocolate and clearly definable notes of hazelnut. We roast two different varieties for this blend, which together have a particularly harmonious and rounded effect on the taste. Due to the almost non-existent acidity, this blend is particularly gentle.

Important note for ground coffee:
Please note that we cannot offer a universal grind for ground coffee for use in portafilter machines. The optimum grind size must be individually adjusted to the respective machine, as factors such as sieve size, pump and brewing pressure as well as temperature vary greatly depending on the model. We therefore always recommend buying whole beans and adjusting the grind yourself to suit your machine.

Important note on returns:
Ground coffee cannot be exchanged as it is ground exclusively at the customer’s request. Thank you for your understanding.

Sustainable cultivation and quality awareness
Similar to wine, the origin, cultivation and careful harvesting also form the basis for a specialty coffee. For our coffees, we use only ripe and hand-picked 100% Arabica coffee beans, because the elaborate harvest by hand is an essential quality criterion. Our highland coffees are natural products and are grown in shady forest gardens in a nature-friendly way. This preserves the biodiversity in the growing region. The coffee cherries can ripen slowly at cool altitudes with nutritious and fertile soil conditions. The coffee plants have more time to develop their characteristic and fruity aromas under these optimal climatic conditions near the equator.
Freshly roasted by hand
All Röststätte coffees are gently roasted by hand in Berlin so that the natural flavors can fully develop without unwanted acids. For a pronounced body and a versatile flavor profile in the cup, we want to emphasize and optimally process the special features of the respective variety, farm and origin of the coffee with our roasting. The aim is to exploit the full potential of the green coffee through our roasting process and to highlight the valuable work of the producers in the growing countries. These are our quality principles – from source to the final cup.
