Cerrado & Mogiana Community Lot
For Capital, we use the Santiago from Brazil, which we currently source as a community lot called Cemorrado. The coffee farms are located in renowned regions known for producing high-quality coffee. This community blend represents a strong commitment to consistent flavor and careful craftsmanship. The coffee cherries are selected according to various criteria, including distinctive flavor profiles, bean density, and color consistency, ensuring reliable quality. Every cup of Cemorrado brings together a wide range of aromas and reflects the harmony of ecological sustainability and collective community effort.
Olapa, Esquipulas, Chiquimula and Oriente
Green Valleys of the Chorti is a washed single-origin coffee from southeastern Guatemala and is also part of our espresso blend Capital. It is grown by smallholder farmers at altitudes between 1,500 and 1,700 meters. The region is characterized by volcanic soils and a humid, often misty climate, creating ideal conditions for coffee cultivation. The cup profile is well-balanced, with a clear structure and pleasant sweetness, allowing it to integrate harmoniously into the blend. Beyond its quality, the coffee is linked to a special initiative: Green Valleys of the Chorti supports educational and childcare programs for children in coffee-farming communities in the border region between Guatemala, Honduras and El Salvador.
Karadykan Estate
The small proportion from India is grown in the Chikmagalur region. There, the coffees grow on steep mountain slopes on clay-like soils at an altitude of 1100 meters. Our Monsooned Malabar comes from the Karadykan Estate, a farm that was founded in 1890 by the two British brothers W.L. and C.S. Crawford. The farm later became the property of Sangameshwar Coffee. Irrigation is provided exclusively by natural rainfall. The absorption of moisture during the monsoon rains gives the coffee its exceptional cup profile and aroma.

The Capital Espresso Blend consists of different Arabica varieties, such as Catuai and Bourbon (Guatemala), Mundo Novo, Acaia and Catucai (Brazil) and Catimor from India.

Capital, our new “Hometown Favorite” blend is carefully balanced with a creamy texture in the cup, extra crema and a particularly full body. The taste of this fine espresso is reminiscent of dark chocolate, toffee and hazelnut.
Story
If you like your espresso with a rich crema, our new blend is the right choice. In contrast to our other roasts, Capital has a more classic taste, strong but at the same time completely low in acidity. Balanced chocolaty-sweet notes meet a full-bodied taste with lots of character.

Important note about the recipe:
Please note that recipes were created using first-generation Meraki machines. For subsequent models, it may be necessary to adjust the grind size individually. The manufacturer has made changes to the calibration of the grinder.

Sustainable cultivation and quality awareness
As with wine, the origin, cultivation and careful harvesting of coffee form the basis for a specialty coffee. We only use ripe and hand-picked 100% Arabica coffee beans for our coffees, as the laborious harvesting by hand is an essential quality criterion. Our highland coffees are natural products and are grown in shady forest gardens in an environmentally friendly way. This preserves the biodiversity of the growing region. The coffee cherries can ripen slowly at cool altitudes with nutritious and fertile soil conditions. Under these optimal climatic conditions near the equator, the coffee plants have more time to develop their characteristic and fruity aromas.  
Freshly roasted by hand
All Röststätte coffees are gently roasted by hand in Berlin so that the natural aromas can fully develop without any unwanted acidity. To achieve a pronounced body and a versatile taste profile in the cup, we want to emphasize and optimally process the special features of the respective variety, farm and origin of the coffee with our roasting. The aim is therefore to exploit the full potential of the green coffee through our roasting method in order to emphasize the valuable work of the producers in the countries where the coffee is grown. These are our quality principles – from source to the final cup.
