Karana Community, Kintamani
On the tropical island of Bali, between the Batukaru and Agung volcanoes, lives the wonderful Karana community. It brings together 337 smallholder farmers from the Kintamani region who embrace traditional Balinese culture and Hinduism. In doing so, they combine agriculture and regional identity in a unique way. High up at over 1,200 meters, their farms stretch across 477 hectares of shaded forest gardens, where they cultivate delicate Arabica plants among oranges, vegetables and other crops. This promotes biodiversity and sustainable farming practices. The location on beautiful Bali offers ideal conditions for coffee cultivation: constant temperatures around 30°C, high humidity and the western monsoon. The producers in the region are organized within the Subak Abian – a traditional structure rooted in the Hindu philosophy of Tri Hita Karana: harmony between people, nature and spirituality. Karana is committed to sustainability: they compost, avoid chemicals and intentionally work with shade trees. A newly built dry mill supports the farmers during processing. In short: Karana is a fusion of culture, sustainable agriculture and community-driven innovation.

Kartika variety from Indonesia
 
For those who usually drink varieties from Africa or South America, Kartika is an exciting discovery. The variety was brought to Indonesia in 1987 by Portuguese researchers and is known for its elegant, clean flavor profile. Kartika produces very small cherries, is considered a natural mutation of Catuai, and requires more care due to its sensitivity to leaf rust – which is why it is less commonly cultivated. Producers who grow it appreciate its precise aromatics and high cup quality. The natural process adds a pleasant sweetness and flavor complexity to the cup.

Each sip carries you from the grey winter season to the sunlit slopes between Bali’s volcanoes. Sustainable cultivation and commitment to quality
Similar to wine, the origin, cultivation and careful harvesting form the foundation of a specialty coffee. For our coffees, we use only ripe, hand-picked 100% Arabica coffee cherries, as the labor-intensive manual harvest is a key quality factor. Our high-altitude coffees are natural products grown in shaded forest gardens using environmentally friendly methods, helping to preserve biodiversity in the growing regions. The coffee cherries can ripen slowly in the cool highlands with nutrient-rich and fertile soil conditions. Under these optimal climatic conditions near the equator, the coffee plants have more time to develop their characteristic and fruity aromas.  
Freshly roasted by hand
All Röststätte coffees are gently hand-roasted by us in Berlin so that their natural aromas can fully unfold without creating unwanted acidity. To achieve a pronounced body and a versatile flavor profile in the cup, our roasting approach aims to highlight and refine the unique characteristics of each variety, farm and origin. Our goal is to unlock the full potential of the green coffee through our roasting style and to honor the valuable work of the producers in the growing countries. These are our quality principles – from source to the final cup.

  • Bloom for 30 seconds with 60g of water
  • Then pour according to the recipe (60g – 60g – 60g – 60g), always waiting until the water has completely drawn down before adding the next pour

  • Total brew time: 2:55 minutes
