Flavours of Winter

Our Flavours of Winter coffee series has enriched our assortment for five years, bringing new festive flavour worlds to the cup each season. This year, the collection features two special single-origin filter roasts, developed by our Head Roaster Ivo Weller. With notes of speculoos, dark chocolate, cinnamon, grapefruit, apricot, orange liqueur, and honey, Tarrazú Noel and Regalo de Dios capture the essence of winter in every brew – perfect for cozy days, relaxed V60 sessions, and delicious cups from the French press, AeroPress, or filter coffee machine. A little festive indulgence in every sip.

Weihnachten als Inspiration

With our Winter Coffee Box, we want to introduce you to new flavour profiles while sparking a little touch of holiday magic. And of course, we’re here to help you brew it just right – just like our baristas do in our Berlin cafés. That’s why our Head Barista, Valeria Kutuzova, has created a dedicated brew guide for the coffees included in the Winter Coffee Box.

Sustainable Cultivation and Quality Commitment

Similar to wine, a coffee’s origin, cultivation, and careful harvesting form the foundation of a true specialty coffee. For our coffees, we use only fully ripe, handpicked 100% Arabica beans, as meticulous manual harvesting is an essential marker of quality. Our high-altitude coffees are natural products grown in shaded forest gardens using environmentally gentle farming practices. This preserves the biodiversity of the growing region. In the cool climate of higher elevations, coffee cherries are able to ripen slowly in nutrient-rich, fertile soils. Under these optimal conditions near the equator, the coffee plants have more time to develop their distinctive, fruity aromas.

Freshly roasted by hand

All Röststätte coffees are gently hand-roasted by us in Berlin to allow their natural aromas to fully develop without creating unwanted acidity. To achieve a pronounced body and a nuanced flavour profile, our roasting approach is designed to highlight the unique characteristics of each variety, farm, and origin. Our goal is to unlock the full potential of every green coffee we work with, honouring the valuable work of the producers in the countries of origin. These are our guiding principles of quality – from source to the final cup.
