Gedeb Hallo Beriti – Yirgacheffe
In the famous coffee region of Yirgacheffe, specifically in the Gedeo Zone in southern Ethiopia, lies the Gedeb Hallo Beriti Washing Station. Around 2,100 smallholder farmers, of whom approximately 1,200 are regular partners, deliver their hand-picked, ripe coffee cherries there. After sorting out inferior fruits (“floating”), the high-quality cherries are gently dried in the shade for about 18 days until they reach the ideal moisture content. The result: an Ethiopian Heirloom Natural from up to 2,400 meters in altitude—complex, fruity, and surprisingly flavorful.

Heirloom is a collective term for rare, indigenous coffee varieties from Ethiopia. Due to the enormous genetic diversity—estimates suggest there are over 6,000 to 10,000 varieties—many of these coffees have not yet been clearly classified. In fact, almost every village in Ethiopia could have its own distinct variety. Typical of the natural processing method is a slightly sweet, fruity flavor profile with notes often reminiscent of berries—a character that is especially prized.

We are delighted to announce our first release from the Gedeb Halloberiti Washing Station in Ethiopia. This coffee from Yirgacheffe will transport your taste buds to the fascinating diversity of Ethiopian coffees. It combines a clear, elegant structure with a lively, natural sweetness and finely nuanced fruit aromas of strawberry, rosehip and jasmine. The clean, precise cup reveals new facets with every sip – from bright, fresh nuances to a soft, harmonious texture.

Yirgacheffe
Yirgacheffe – a name that sounds almost mythical in the world of specialty coffee. This region in southern Ethiopia is considered one of the birthplaces of Arabica coffee and is famous for its complex, fruity flavor profiles. Thanks to its tropical climate, shaded forests, and elevations ranging from 1,600 to 2,400 meters above sea level, Yirgacheffe produces the kind of intricate taste profiles we truly love. Most producers here are smallholder farmers cultivating less than one hectare of land, often in so-called “coffee gardens,” where the plants grow amidst natural vegetation. This traditional, mostly organic way of farming gives the coffees their characteristic depth. Each washing station contributes its own nuances — from floral and citrusy to sweet and berry-like — making Yirgacheffe an untouchable icon of the specialty coffee world.

Sustainable cultivation and quality awareness
Similar to wine, the origin, cultivation and careful harvesting of coffee beans form the basis for a speciality coffee. We only use ripe, hand-picked 100% Arabica coffee beans for our coffees, as the laborious process of harvesting by hand is an essential quality criterion. Our highland coffees are natural products and are grown in a nature-friendly way in shady forest gardens. This preserves the biological diversity in the growing region. The coffee cherries can ripen slowly at cool altitudes with nutritious and fertile soil conditions. Under these optimal climatic conditions near the equator, the coffee plants have more time to develop their characteristic and fruity aromas.

All Röststätte coffees are carefully hand-roasted by us in Berlin to allow their natural aromas to fully develop without creating any unwanted acidity. Our roasting approach aims to bring out the unique characteristics of each variety, farm, and origin, resulting in a rich body and a complex, balanced flavor profile in the cup. The goal is to unlock the full potential of every green coffee and highlight the valuable work of the producers in the growing regions. These are our core quality principles – from source to the final cup.
Our brew recommendation for the V60 Dripper
  • 20g ground coffee
  • 300 ml filtered water at 92–93 °C
  • Start with a 30-second bloom using 60 g of water.
  • After blooming, continue pouring in four equal stages of 60 g each, always waiting until the previous pour has fully drawn down before starting the next one.
  • Total brew recipe / technique: 60 g – 60 g – 60 g – 60 g – 60 g
  • Total brew time: 3:00 minutes
