Finca Un Regalo de Dios, Mozonte, Nueva Segovia
In the heart of Nicaragua's northern highlands, in the mountains of Nueva Segovia, lies the Finca Un Regalo de Dios – meaning “A Gift from God.” Here, Luis Alberto Balladarez Moncada, one of the country's most respected coffee farmers, cultivates coffee on around 70 hectares at an altitude of up to 1,700 meters. The plantations are nestled in pine and deciduous forests, which create exceptional biodiversity. Although it is not a pure Women Producers Microlot, the coffee is predominantly produced by women: 78 women and 7 men work on the finca. The finca bears the Cup of Excellence seal, the most prestigious competition for top-quality coffees, and has its own processing facility (wet mill). This means that selection, processing, and quality control remain entirely in-house. Sustainability is Luis's top priority: the coffee pulp is returned to the plantations as organic compost to strengthen the soil and protect nature.

Regalo de Dios is a hand-picked microlot of the Catimor variety – a cross between Caturra and Timor Hybrid, bred in the 1950s for greater resistance to coffee rust. Catimor impresses with its productivity and adaptability. At high altitudes such as those found at Finca Un Regalo de Dios, and with careful processing, the variety unfolds its full potential: sweet, fruity notes and a lively acidity. The beans are processed naturally, which emphasizes their intense fruity character.

Regalo de Dios – The coffee you selected
Our new filter coffee was selected together with you at the Berlin Coffee Festival during "The People's Roast" event. The microlot comes from Luis Alberto Balladarez Moncada in Nicaragua and was processed naturally. Regalo de Dios delights with fruity notes of apricot, rosehip, and pink grapefruit. A lively, balanced coffee that perfectly combines sweetness and freshness. Its clear fruitiness and elegant structure make it a unique taste experience – selected directly by you and for everyone who loves special filter coffees.
Cup of Excellence
Luis Alberto Balladarez Moncada's Finca Regalo de Dios has won the Cup of Excellence award several times – the highest accolade a coffee farm can receive. It stands for absolute top quality. The competition is organized by the Alliance for Coffee Excellence in the most important coffee-growing countries in Africa, South and Central America. Before a coffee receives the seal, it must pass a rigorous tasting process: A national jury of experts from coffee organizations, exporters, and Q graders evaluates each coffee. The competition runs over several rounds: Five cups of each coffee are cupped simultaneously to test its quality and consistency. Only the best survive the fierce competition – out of several hundred submissions, usually only 20–30 coffees per country are awarded.

Sustainable cultivation and quality awareness
Similar to wine, the origin, cultivation, and careful harvesting of coffee beans form the basis for specialty coffee. We only use ripe, hand-picked 100% Arabica coffee beans for our coffees, as the labor-intensive harvesting process is an essential quality criterion. Our highland coffees are natural products and are grown in a nature-friendly way in shady forest gardens. This preserves the biological diversity in the growing region. The coffee cherries can ripen slowly at cool altitudes with nutritious and fertile soil conditions. Under these optimal climatic conditions near the equator, the coffee plants have more time to develop their characteristic and fruity aromas.  
Freshly roasted by hand
All Röststätte coffees are gently roasted by hand in Berlin so that the natural aromas can fully develop without producing unwanted acids. To achieve a distinctive body and a versatile flavor profile in the cup, we aim to highlight and optimally process the special characteristics of each variety, farm, and origin of the coffee through our roasting process. Our goal is to exploit the full potential of the green coffee through our roasting method, thereby highlighting the valuable work of the producers in the growing countries. These are our quality principles – from source to the final cup.
Our brew recommendation for the V60 hand filter
  • 20g ground coffee
  • 300 ml filtered water at 91° C
  • Blooming for 30 seconds with 60g
  • Then pour according to the recipe (60g – 60g – 60g – 60g), always waiting until the water has completely run through
  • Total brewing preparation/technique: 60g – 60g – 60g – 60g – 60g
