Luis Eduardo Campos, nicknamed "Don Luis," produces this fine microlot from Costa Rica that will quickly enchant your palate. He lives with his family on his 200-hectare (15-hectare for coffee) Fazenda Cordillera de Fuego in the Alajuela region in the legendary West Valley (more on that below). At an altitude of up to 1,800 meters above sea level, Don Luis is constantly searching for new and innovative ways to improve his coffees. He had the idea of ​​thermal fermentation, which the university-educated man experimented with for several years. He wanted to extract the naturally occurring flavors of the coffee through an innovative fermentation process – the Thermic Process was born. Don Luis places great importance on sustainability. He has reduced greenhouse gas emissions and his water consumption. Solar panels provide all the energy for the main office and about half of the energy for the mill.

Don Luis is a selectively hand-picked microlot of the Caturra variety. Developed in Brazil around 100 years ago, it is a natural mutation of the Bourbon variety. Today, Caturra is one of the most economically important coffee varieties in Central America and is often used as a benchmark against which new varieties are tested. A special highlight: This coffee was fermented as a thermic method – for plenty of sweetness, complexity, and a versatile acid structure.

Don Luis

Our first espresso release from the Fazenda Cordillera de Fuego in Costa Rica’s famous West Valley embodies everything we love about special coffees. This thermally processed microlot impresses with a syrupy body, deep sweetness, and exceptional aromatic complexity. A liqueur-like flavor experience unfolds in the cup with intense notes of orange liqueur, cinnamon, dark chocolate, and coconut cream – a summery espresso that feels like a liquid dessert and at the same time reminiscent of a fine digestif.

Thermic Process
For the first time, we're offering a coffee fermented using the Thermic process. First, the cherries are partially pulped with water and then heated. This naturally breaks down the sugar and partially caramelizes the beans. This inventive process from Don Luis gives the coffee an exceptionally sweet and fruity flavor. You can expect a well-rounded and balanced cup.
West Valley – Valley of Heavenly Taste
Costa Rica's West Valley, legendary in the specialty coffee scene, is known for its fine coffees and innovative processing methods, as well as for its Arabica beans with balanced acidity and body. High altitudes, volcanic soils, and tropical climates—regions like Alajuela, Naranjo, and Palmers are known for high-quality beans with a heavenly flavor. Be sure to try it!
What is a Microlot?

Available only in very small quantities, our microlots are something you definitely shouldn’t miss. Also known as community or single producer lots, we source these coffees from small-scale farming families – often just a few bags (60 kg) end up in our roaster. These contain outstanding flavor profiles, as the coffees are grown under optimal microclimatic conditions. Because the quantities are so small, our selection is constantly changing, allowing you to sip your way around the entire coffee belt. Important note for ground coffee:
Please note that we cannot offer a universal grind size for ground coffee used in portafilter machines. The optimal grind size must be individually adjusted to each machine, as factors such as sieve size, pump and brewing pressure, and temperature vary greatly depending on the model. We therefore always recommend buying whole beans and adjusting the grind size yourself to suit your machine.

Ground coffee is non-returnable, as it is ground exclusively at the customer’s request. Thank you for your understanding.

Sustainable cultivation and quality awareness
Similar to wine, the origin, cultivation, and careful harvesting of coffee form the basis for a specialty coffee. For our coffees, we use only ripe, hand-picked 100% Arabica coffee beans, as the laborious manual harvest is a key quality criterion. Our highland coffees are natural products and are cultivated in shady forest gardens using environmentally friendly methods. This preserves the biodiversity of the growing region. The coffee cherries can ripen slowly at cool altitudes with nutritious and fertile soil. These optimal climatic conditions near the equator give the coffee plants more time to develop their characteristic, fruity aromas.  
Freshly roasted by hand
All Röststätte coffees are gently roasted by hand in Berlin, allowing the natural aromas to fully develop without creating unwanted acids. To ensure a pronounced body and a diverse flavor profile in the cup, we aim to emphasize and optimally process the specific characteristics of the respective variety, farm, and origin of the coffee. Our goal is to utilize the full potential of the green coffee through our roasting method and also highlight the valuable work of the producers in the growing countries.
